Keto Crustless Cheesecake
3 – 8 oz Packages Cream Cheese, softened
1/3 Cup Sour Cream
4 Large Eggs
1 Cup Swerve Sweetener
1 tsp Vanilla Extract
Preheat oven to 350 Degrees F.
Spray an 8″ Springform pan with coconut oil.
In a large bowl and using an electric mixer, blend the cream cheese until smooth. Add the Swerve, sour cream and vanilla extract and blend. Add the eggs, one at a time, until creamy.
Pour mixture into already sprayed springform pan and place in oven. Bake for 50-55 minutes, until top turning slightly brown. Remove from oven and allow to cool. Serve with desired topping(s)!
Note: The cheesecake will rise when baking, then begin to fall as it cools. Serve warm or cool, but allow to set at least about 20 minutes out of the oven. It’ll be softer when warm, and will be a stiffer cheesecake texture when cooled in the fridge.

Top with berries / berry sauce:
Strawberries, Blueberries, Blackberries or Raspberries
Using 1 cup fresh fberries, smash and simmer in a small saucepan. Add 1 Tbsp Confectioners Swerve and 2 Tbsp water and stir. Add additional water or sweetener as desired. Chill. Drizzle over cheesecake slices when served, and add one berry to the top to garnish.

This cheesecake is great without a crust as it makes almost a crust-like bottom while baking. If you really want a crust, use the following and press into the springform pan prior to pouring in the cheesecake filling:
2 Cups Almond Flour
5 Tbsp Butter
3 Tbsp Swerve
1 tsp Vanilla Extract

Note: I’ve also used the caramel sauce (from the posted recipes in the pancake/waffle video on this cheesecake) with and without pecans; and it’s super yummy!
